Grandma's Refrigerator Pickles

Ladies and gentlemen, I introduce to you the recipe you all have been begging for - Grandma’s Fridge Pickles. I am making it my life goal to learn how to make pickles exactly like my grandma, that’s how good they are. These pickles aren’t her official canning recipe but they are a quick version that she makes more frequently these days that taste pretty darn close to the real deal. They are perfect to quickly whip up with a smaller batch of homegrown cucumbers (or a few store-bought ones) and last in the fridge for months!

 

What do you need?

  • Enough cucumbers to fill 2 1 gallon containers (about 6-7 long english cucumbers)

  • 3 quarts water

  • 1 pint white vinegar

  • 1/2 cup kosher salt

  • 1 cup white sugar

  • 1 sliced onion

  • Fresh dill

  • Non-metallic containers (plastic, glass, old yogurt containers, really anything works)

 

How It’s Done

  1. Wash and cut cucumbers into your desired shape. I usually do half spears for eating on their own and half rounds for sandwiches. Fill your containers with the washed and cut cucumbers.

2. Bring water, vinegar, salt, and sugar to a boil. Pour over cucumbers - make sure all cucumbers are covered.

3. Add sliced onion and dill on top. Cover and let stand at room temperature for 24 hours.

4. After 24 hours your pickles are ready! Place them in the fridge and enjoy them for months to come!
